Need Creative Ideas for Healthy, Quick Lunches?

When that first growl of my stomach emerges around 11:30am my brain starts to think of what we have in the fridge other than just sandwiches. I enjoy an occasional sandwich, but just like my Mother I am not one who enjoys a sandwich for lunch every day. It makes me happy to have leftovers in the fridge but the days I don’t, I scramble to throw together something quick but healthy.

My children are easy to please. I love that! They enjoy variety. They love fresh fruits and vegetables, so that is never an issue but just like any of us, they get tired of the same things day in and day out.

Does that sound like a problem you may have? It is for many Moms out there! Weelicious is the answer!

It provides more than 160 tried and true recipes, taking lunchtime from a pain to fun!  I had the pleasure of receiving the Weelicious Lunches book and I love that it is full of simple, easy to make recipes that are fun and healthy!

We have been trying a few of the fun recipes and I have to say I LOVE the book!  Many of the ideas are things we eat, I just don’t always think about them!  Just like Catherine, plain Greek yogurt is one of my pantry staples.  I am partial to Stonyfield’s Organic Greek yogurt just as Catherine is.

Here are a few of the recipes included that use Greek yogurt:

  • Cucumber Dip
  • Zippy Yogurt Tahini Sauce
  • Fruity Delight
  • PB & J Yogurt Swirls

The kids loved the PB & J yogurt swirls!  Another great recipe we thoroughly enjoyed was the Zippy Yogurt Tahini Sauce.  It is packed full of protein and flavor and is the perfect dipping sauce from chicken to veggies.  Something else I LOVE?  It is EASY!

Zippy Yogurt Tahini Sauce

  • 1/2 cup plain yogurt
  • 1 Tablespoon of lemon juice
  • 1 Tablespoon of tahini

Stir them together and have fun dipping!
