Need Creative Ideas for Healthy, Quick Lunches?

When that first growl of my stomach emerges around 11:30am my brain starts to think of what we have in the fridge other than just sandwiches. I enjoy an occasional sandwich, but just like my Mother I am not one who enjoys a sandwich for lunch every day. It makes me happy to have leftovers in the fridge but the days I don’t, I scramble to throw together something quick but healthy.

My children are easy to please. I love that! They enjoy variety. They love fresh fruits and vegetables, so that is never an issue but just like any of us, they get tired of the same things day in and day out.

Does that sound like a problem you may have? It is for many Moms out there! Weelicious is the answer!

First off, don’t you just love the name Weelicious?

It provides more than 160 tried and true recipes, taking lunchtime from a pain to fun!  I had the pleasure of receiving the Weelicious Lunches book and I love that it is full of simple, easy to make recipes that are fun and healthy!

We have been trying a few of the fun recipes and I have to say I LOVE the book!  Many of the ideas are things we eat, I just don’t always think about them!  Just like Catherine, plain Greek yogurt is one of my pantry staples.  I am partial to Stonyfield’s Organic Greek yogurt just as Catherine is.

Here are a few of the recipes included that use Greek yogurt:

  • Cucumber Dip
  • Zippy Yogurt Tahini Sauce
  • Fruity Delight
  • PB & J Yogurt Swirls

The kids loved the PB & J yogurt swirls!  Another great recipe we thoroughly enjoyed was the Zippy Yogurt Tahini Sauce.  It is packed full of protein and flavor and is the perfect dipping sauce from chicken to veggies.  Something else I LOVE?  It is EASY!

Zippy Yogurt Tahini Sauce

  • 1/2 cup plain yogurt
  • 1 Tablespoon of lemon juice
  • 1 Tablespoon of tahini

Stir them together and have fun dipping!

  2. As the eldest in the house, I am usually in charge of making lunch when my mom is at work. So I really try to make something that will fill my brother and sisters till dinner. When I’m at school, I try to find a good lunch that would help me participate in class, giving me energy. Basically it’s about having food that will last for at least six hours without feeling hungry.

  3. I’m not a mom, but it’s hard to come up with healthy lunch ideas when I’m so busy during the day, so I totally identify. The recipes you mentioned sound great, so I would love to check out this cookbook myself. Thanks for sharing!

  4. I have to get this book! My whole family loves Greek yogurt. We use it for everything from smoothies to a substitute for sour cream. I need all the help I can get coming up with new lunch ideas so that my kids don’t end up eating the same thing every day!

  6. Weelicious sounds like a great book! I may have to add it to my list for this Christmas with stocking stuffers. Husband can get me one and I’ll pass it along for a few of my friends that have the young ones at home and are looking for new fun ways for lunch and other meals!

  7. I’ve visited Weelicious since my son was just starting to eat! It’s one of my favorite sites. Can’t wait to try this Zippy Yogurt Tahini Sauce. Lunch time is challenging for me because my son takes a lunch box and I can’t send anything that needs to be heated.

  8. Now that I am semi retired I seem to be searching like crazy for things to eat at lunch–never quite satisfied-and I am not a picky eater. I do love Yogurt and Stonyfields is one of my favorite brands-has been for many years. I really have to remember to go out and buy some for a quick lunch-and hope I win cause I could sure use some ideas!!

  9. With my job it’s always going to be a challenge. I’m active duty military and I’m out the house by 5:30am at times, sometimes even earlier. We barely have time for ourselves, much less eat. I usually have 1 meal which is why most military personnel live on Monsters and Red Bull. 🙂

  11. First of all, I love Weelicious! This is going to sound funny, but my biggest lunch challenge is getting the food to fit into my little guy’s lunch box. My aunt (who is like his grandma) bought us a Little Igloo lunch box, but the interior is so small I can’t fit all the goodies in there with an ice pack. Getting my son to eating healthy really is not much of a problem. We are lucky he loves good food! Thanks for the giveaway 🙂
