During my pregnancy with Bethany I craved fish.  I have always enjoyed eating fish but I was truly craving it.  It had to have truly been something my body was really needing.  With my lack of desire to cook during much of my pregnancy, canned tuna was one very quick way to satisfy my cravings for a healthy lunch or healthy dinner.

Wild premium tuna is an important part of a healthy diet.  Not only does it contain high-quality protein but also gives our bodies the Omega-3 fatty acids we need but can’t produce ourselves.  When my craving struck, and they did often, Skipjack tuna was a quick way I could satisfy my cravings but could also feel good knowing that it not only contributes to heart health but also can contribute to my baby’s growth and development.

While pregnant, I wasn’t able to handle the richness of mayo so I started trying to come up with lighter, more healthy tuna recipes.  This Tuscan Tuna Salad is a tuna recipe that the kids and I really enjoyed.  In about five minutes time I could have this whipped up and ready to go.  While I choose to eat mine on romaine heart leaves, the children enjoyed it on crackers.

Tuscan Tuna Salad Recipe

Ingredients

  • 1 can of Tuna in water
  • 1 can of Cannellini or White Kidney Beans, drained and rinsed
  • 3 Tablespoons of Olive Oil
  • 2 Tablespoons of Lemon Juice
  • 12 Grape Tomatoes, halved or quartered
  • Salt & Pepper to taste
  • Romaine Hearts

Directions

Drain your tuna and beans.

Add the tuna, beans, tomatoes, olive oil and lemon juice together.  Gently mix to combine.

Spread your mixture on top of romaine heart leaves.  Salt and pepper to taste.

Ingredients
  • 1 can of Tuna in water

  1. I love tuna salad and this one looks amazing. I have been really trying to cut as much meat out of my diet and I think that tuna is really versatile and can be included in lots of meals. Thanks for the great recipe.

  2. I’ve never been a fan of tuna myself, but my hubby really does love it. I just heard about this company the other day and love how environmentally responsible they are. A wonderful brand indeed! And even though I am not a tuna eater, that sandwich really does look yummy!

  3. That sounds like a way I would enjoy Tuna-I am not much into mayo either. Of course I cannot go near olive oil so I would have to use something different. I have never seen this brand and will look for it.

  4. Great, now I’m craving tuna! I have found mixing a low calorie Ranch with tuna and using Melba toast is a delicious, low calorie snack! I will have to try your recipe!
