Do you have an avocado lover in your family? In my family, it is myself! My kids love guacamole but they are not as adventurous with avocados as I am. Being pregnant, avocados are on of the things I have really craved (along with hummus!). I do love avocadoes just sliced on a simple sandwich but I also love guacamole, avocados added to my Tortilla Soup or White Chicken Chili.
Avocados have a buttery-smooth texture, are rich in antioxidants and protein, so they are the perfect complement to almost any meal.
What is your favorite way to enjoy a rich, ripe avocado?
Earlier this week I posted a new recipe that uses avocados in a way you may not normally think, in brownies! Let me say before you judge that they are delicious! If you missed it, be sure to check out the Fudgy Avocado Brownie Recipe here! By using avocado and coconut oil, there is no need for eggs so this recipe is vegan and dairy free! It has a thicker fudgy texture over a traditional brownie but don’t let that stop you.

I was introduced to it a few weeks back and I love that there are so many avocado recipes that are out of the box, ways that I would never think of using avocados myself. Now that I am past my severe morning sickness, I am really enjoying cooking again. I love that you can create a favorites list right on their website! You can even add the ingredients to a virtual shopping list.
