Muffins are one of the often requested items at breakfast time in our house. The kids have their favorites and will occasionally ask for something different. Austin usually requests vanilla cupcakes (a.k.a. muffins). When we sat down to make our meal plan for February he requested cinnamon muffins. He said, you know they kind you use to make with crumbs on top. I knew exactly which dairy free muffin recipe he was referring to.
This morning I went to work to whip up a batch. My children refer to cinnamon as the sweet spicy and that is what these are full of…cinnamoney deliciousness.
These are so simple to make and rather than the crumb topping getting completely crunchy, some of it soaks into the muffin so you find moist, cinnamon deliciousness waiting to be discovered inside.
Coffee Cake Dairy Free Muffin Recipe
- 1 1/2 cups of flour
- 3/4 cup of sweetener
- 1 1/2 teaspoons of baking powder
- 1/2 teaspoon of salt
- 3/4 cup of Almond milk
- 1 egg
- 1/4 cup of melt oil (I prefer coconut oil)
Crumb topping Ingredients
- 2 1/2 Tablespoons of melted Earth Balance spread
- 6-8 Tablespoons of sweetener
- 1/3 cup finely chopped nuts
Preheat your oven to 400 degrees. I love using Parchment cupcake liners so they slide right off the muffins or you can lightly oil your tins.
Mix your sweetener and coconut oil together. Stir in your egg. Next add your Almond milk. Finally add your dry ingredients and stir well. Fill each muffin tin 2/3 of the way full.
For the topping, combine the spread and sweetener, it will be on the wet side. Crumble it over each muffin. It is sticky so it falls in clumps. Sprinkle your chopped nuts over the top.
Bake for 15-17 minutes or until the tops are slightly golden brown. Allow to cool 10 minutes and dive in!
The kids are always excited to see just how much topping has seeped inside. Once you bite in, you will discover a beautiful brown swirl of sweetness hidden inside. These are moist and taste just like coffee cake. The only thing left to decide is whether you will be drinking coffee or a milk beverage.
