CopyCat Disney Cinnamon Almond Recipe

DIY Copycat Disney Cinnamon Almonds - OurHomemadeLife.com

Close your eyes just for a moment and take a stroll with me.  Were walking down Main Street in the Magic Kingdom.  Can you hear the sounds all around you?  The children laughing, the parade making its way towards you, the smells as you pass by the shops and restaurants and snack carts?  I can!  It’s amazing how a simple smell can trigger a memory or in some cases, many.  There are certain sites that are iconic for Disney, like Cinderella’s castle and Spaceship Earth.  Equally so are iconic smells.  When I think of a stroll through Disney I think of the lingering smell of popcorn or cinnamon almonds calling my name as we walk by the red carts.  The smells just pull you in.  You can taste them before them even touch your lips.

I may not be at Disney currently, but that doesn’t mean I can’t enjoy some of the yummy Disney treats we have come to love.  These Cinnamon Almonds are completely delicious and will make your entire house smell like a stroll down Main Street while passing a cart roasting them.

Copycat Disney Cinnamon Almond Recipe

Ingredients

  • 1/3 cup of butter (I use Earth Balance Vegan)
  • 2 egg whites
  • 2 teaspoons of salt
  • 1 cup of sugar
  • 4 teaspoons of cinnamon
  • 16 ounces of whole almonds

 

Directions

Preheat oven to 325 degrees.

Melt butter or vegan substitue.

Beat egg whites with salt until white and frothy.

Slowly stir in sugar, 1/3 cup at a time and beat vigorously with a mixer until the mixture is thickened and peaks form.

Add cinnamon and beat until combined.

Stir in almonds.

Pour in melted butter and mix together.

Pour the mixture onto a foil or parchment lined baking sheet.  Smooth to be a single layer.

Bake for 45-50 minutes, stirring every 10 minutes or so, until the almonds are crisp.
