Crockpot Buffalo Chicken Taco Recipe

buffalo chicken tacosWhile I was pregnant with Bethany I didn’t have a lot of cravings.  In the beginning it was humus, which I indulged myself because it isn’t bad for you.  I craved chocolate, but I could enjoy chocolate any every day not being pregnant.  My last trimester I had a hot craving, hot as in spicy!

I craved buffalo wings!  Buffalo chicken pizza, buffalo chicken sandwiches or wings all sounded so good.  With having constant heartburn that was like having a fire within, I refrained.  One day I caved and hubby obliged.  He brought me home wings from one of the local restaurants.  I knew I would pay later but I enjoyed each and every one!  Odd thing was, that was my first night I had no heartburn!  Put out fire with fire?

Then I started experimenting a little in the kitchen.  As a result, these crockpot buffalo chicken tacos were born!

Crockpot Buffalo Chicken Taco Recipe

  • 1 lb of chicken breasts or thighs
  • 4 Tablespoons of butter
  • 1/4 cup of your favorite hot sauce
  • Shredded lettuce
  • Chopped Tomato
  • Blue cheese dressing
  • Shredded cheese

Directions

 Simply add your top three ingredients to your crockpot.  Cook on low for 6-7 hours or high for about 4 hours or until the chicken is cooked through.  Shred your chicken and add back into the slow cooker.  Mix throughly with your sauces.   Allow to heat back through for about 15 more minutes and then serve warm! 

The great thing about this is that it is very flavorful with very few ingredients.  If you don’t want as much spice, lessen the hot sauce.  If you desire more heat, add as much as you would like. 

Add your garnishes and then drizzel with blue cheese dressing if you enjoy it with your wings.

  1. I plan on using my Crockpot a lot after the new baby comes and this is definitely a recipe I want to try! I don’t think we’ve tried anything like it before! Looks delicious!

  2. The first part of my cravings was ANYTHING Seafood. Then my last 4 months up until 4 hours before I gave birth had to be all spicy, especially Mexican food! Now, 32 years later, every Tuesday is Mexican Food night. Having to adjust “how” I eat now…..the delicious taste of crunchy foods has turned to soft for me. Thank you for this new twist on a spicy favorite. Although I make soft corn tortillas for dinner, this WILL be on the menu for tomorrow night 😛
