Easy Dinner Recipes: Skillet Orzo with Herb Fish

It had been a very long day.  I returned home and my sink was overflowing with dishes.  I wanted nothing more than to kick back and relax because of the looming dark clouds but decided to stick with my plan for the week and make dinner.  This was one of those days it would have been easy to call Bryan and request that he bring take-out.  Instead, I settled on one of my easy dinner recipes, Skillet Orzo with Herb Fish.

Let me start by saying this one of my new favorites in the easy dinner recipes category, despite the ingredients looking a bit long.  The orzo was full of a hearty rich flavor and even gained the approval of Miss Bethany.

Easy Dinner Recipe: Skillet Orzo with Herb Fish

Ingredients:

  • 2 tablespoons of Olive Oil
  • 1 medium onion, chopped
  • 3 cloves of pressed garlic or 4 teaspoons of pre-minced
  • 4 cups of vegetable broth
  • 2 cups of orzo pasta
  • 1/2 cup chopped sun-dried tomatoes
  • 1 teaspoon salt
  • 1 teaspoon of all purpose seasoning
  • fresh chives, chopped
  • 16-oz of fish, cut into at least 4 pieces
  • zest of one lemon & lemon halves

Directions

To begin I pulled my fish out to thaw.  Any type of white fish such as Cod or Tilapia will work, as will Salmon or Trout. Preheat your oven to 350 degrees.

In a dutch oven or ovenproof skillet, warm your olive oil over medium heat.  Add your onion and garlic; saute for 4-5 minutes until tender.

Stir in your broth, pasta, sun-dried tomatoes, salt and seasoning.  Bring to a simmer and reduce the heat slightly.

Continue to cook uncovered for about 13-14 minutes until the orzo is just tender but still firm and some liquid remains.  Stir occasionally while you cook to prevent the orzo from sticking to the skillet.  Remove from the heat.

Add your fish to the top of the orzo.  Season with lemon zest, chives and salt and pepper.

Cover and place in the oven.  The baking time will vary depending on the thickness of the fish, 12-25 minutes.  If your fish is under 1/2″ thick, begin checking at the 10-12 minute mark.  When the fish easily flakes with a fork it is done.

Spoon the orzo onto the plates and top with a fish fillet.  Serve with lemon halves on the side for an added kick.  Add a salad or steamed veggies and you have a hearty meal that is full of flavor and so easy to make!
