Easy Family Meals: Lemon Rosemary Garlic Chicken and Potatoes

Talking about food in our house is a favorite topic of conversation.  We often spend a great deal of time with meal planning to make my job easier.  Having a list of easy family meals to choose from makes it easy in the morning to start preparing so that when dinner does roll around, I am ready to feed my family with wholesome, nutritious food.

We have our regular family favorites but we have decided to continue to broaden the children’s taste buds.  I often use fresh lemons when preparing and cooking fish.  Since we enjoy it so much, I decided to try a dish that combined chicken and lemons.  This dish is hearty and so delicious!  Your house will be full of the most delicious aroma.  Prepare a vegetable or salad on the side and you have a complete meal ready to go in a short amount of time.

Easy Family Meals: Lemon Rosemary Chicken & Potatoes

Ingredients:

  • 1/3 cup olive oil & 4 tablespoons
  • juice of 3 fresh lemons
  • 2 lemons, sliced
  • 3 garlic cloves, diced
  • 5 garlic cloves, sliced
  • 2 tablespoons fresh Rosemary leaves
  • 2 tablespoons fresh Thyme
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 6-8 chicken legs
  • 2 lbs of potatoes (sliced)

Preheat your oven to 450 degrees.  In a medium bowl, add in 1/3 olive oil, lemon juice, sliced lemons, garlic, rosemary, thyme, salt and pepper.  Set it aside.

In a roasting pan, add 4 tablespoons of olive oil and heat it on medium heat on the stove top.

Add the chicken legs, heavy skin side down as well as the potatoes.  Cook about 10 minutes until the chicken is browned.  Turn the chicken over and pour the liquid mixture over the top of the chicken.  Arrange the lemon slices and herbs to be evenly distributed.

Bake at 450 degrees for about 45-50 minutes until the chicken is cooked through.

When serving, pour the juices over the chicken and potatoes.  It not only smells divine, it tastes rich and delicious!
