Just because the girls and I are eating dairy free, doesn’t mean we don’t enjoy our sweets. Truth is, the girls and I LOVE sweets but this year we are trying to curb some of that and get back on track with healthier sweet options! These cookies are just that! They are packed with loads of healthier ingredients but still satisfies your sweet tooth.
Truth is, we have even eaten these cookies for breakfast! You have to give this healthy no bake dairy free cookie recipe a try! You don’t even have to turn on your oven to make these babies, just a few minutes to whip the ingredients together and then pop them in the freezer.
No Bake Dairy Free Cookies
- 2 mashed ripe bananas
- 1 1/2 cups of rolled oats
- 3/4 cup Plum Amaz!n™ Diced Plums
- 3 tablespoons honey
- 2 tablespoons nut butter
- 1 teaspoon ground cinnamon
- pinch of salt
- 2 tablespoons of mini Enjoy Life chocolate chips or chopped nuts (optional)
Mix all the ingredients thoroughly with a fork. Then form them into 12 small balls. Flatten each ball to resemble a cookie shape then place on a plate or cookie sheet. Place them in the freezer for 25-30 minutes until they are firm. Remove and enjoy!
I suppose these could be stored in an airtight container in the refrigerator, but have never had any leftover to try it out
Plum Amaz!n™ Diced Plums are delicious for nutritious snacking alone but also make a healthy addition to cereal, oatmeal, salads or baked goods. They add a hint of sweetness while providing delicious flavor, fiber, vitamin K and potassium.
