Fresh Autumn Pear or Apple Cake
Cake Ingredients:
1 cup sugar
1 cup brown sugar

3 eggs, beaten
1 cup melted butter or oil
2 teaspoons vanilla
3 cups flour (I use whole wheat flour)
1 teaspoon salt
1 teaspoon baking soda
1 1/2 teaspoons cinnamon
2-3 cups raw diced apples or 2-3 cups raw diced pears

Topping Ingredients:
1/2 cup brown sugar
1/3 cup of milk
1 stick of melted butter (1/4 lb)
Preheat the oven to 350 degrees.  Butter a 9×13 or spring form pan.  Set it aside.  Peel and dice (quite small) your pears or apples.  Place in a bowl of water with 1-2 tablespoons of lemon juice to prevent browning if desired.  
 
Mix all wet ingredients together in the order listed  Next mix together all dry ingredients.  Add them to the wet mixture.  The batter will be quite thick.  Next add in the diced pears or apples.  Stir until just mixed.  Spread into the 9×13 or spring form pan.  Bake for 45-50 minutes or until the cake springs back when touched.  
Mix all the topping ingredients together in a small saucepan.  Stir well and turn on medium heat.  Bring to a soft boil and continue to stir frequently for 3 minutes.  Pour on top of the cake and turn to the oven to bake for 4-5 more minutes.  
Allow the cake to cool 10-15 minutes before cutting into it!  (This can be hard to do)  This cake is so delicious!  It smells like fall when baking.  Even my 2 & 3 year olds loved this cake.
