Recipe: Homemade Pancake Mix

I don’t know about your family, but for me I really appreciate any short cuts I can take in the morning time!   Since I no longer purchase boxed mixes for pancakes or waffles I have found having the dry mix pre-made saves a few minutes.  It isn’t much times saved but any time for me is great!  So here is the recipe I use to make my pancake mix.  Depending on the size canister you are using or how often you make pancakes you can make a larger batch but we find this quantity works well for us.


  • 4 1/2 Cups of flour (I prefer to use whole wheat flour but you can use what works well for you).
  • 4 Tbls baking powder
  • 3 Tbls sucanat or sugar
  • 1 Tbls salt

Mix all the ingredients together thoroughly and place in an airtight container.

When you are ready to make your pancakes:

  • Add 1 1/2 cups plus 3 tablespoons of the dry pancake mix.  (I give the jar a shake before I scoop out my mix).
  • Add 1 1/4 cups milk or buttermilk if you prefer
  • 1 egg
  • 3 tablespoons of melted butter

Add together and mix well.  It may still be slightly lumpy.  Using 1/4 cup of batter per pancake, you should yield about 8 pancakes.

Mickey pancakes are a favorite in our house and I will be getting to practice more as our trip to Florida nears.
