Have you ever grown broccoli?
It is so delicious! Although the last few years I have not had success since our weather has been wacky, I am yet again going to try to grow broccoli this fall. As a child I remember asking every day if it were ready to be picked.
There is nothing like eating freshly steamed or sautéed broccoli but that isn’t practical in the winter time so this is how I preserve my broccoli to be enjoyed in the cold winter months.
As you are getting your broccoli prepped, start a large pot of water to boil that you will use to blanch your broccoli.
Cut your broccoli into the size pieces you prefer. I also like to slice or chop my stocks to be used in stir-fry, yummy.
Wash your broccoli thoroughly.
In small batches, place your broccoli in the boiling water for about 1-2 minutes. Be sure not to allow it to sit longer as you are not trying to cook it. Ladle the broccoli out into a bowl of ice water. This helps to stop the cooking process.
Transfer to a towel on the counter top and try to remove as much excess water. You can also do small batches in your salad spinner if you have one.
Once it is dry, place in a single layer on your cookie sheet or baking dish and place in the freezer. Freeze for about an hour or two until it is firm.
Remove from your trays and place in mason jars or Ziploc baggies to freeze.
Now you are all set! The next time you want to add broccoli to a delicious soup, stir-fry or casserole you are all ready to go!
