My Mother made chicken fried steak while we were growing up; I have found memories of it. I rarely fry foods but I have made this several times lately and we have really enjoyed it. We like to serve them with mashed potatoes to dip in or my mother would make a white gravy to go on top. Oh, so yummy!
I am trying to use up some of what is left in my freezer from a quarter of a beef from last year. I am almost completely out of beef but had quite a few packages of cube steaks to use so why not, right!
Makes 5-6 Servings
1lb of Cube Steaks
1 1/2 cups of flour (I use freshly ground Whole Wheat)
1 cup of milk
1 1/2 teaspoons garlic powder
1/2-1 teaspoons onion powder
1/2-1 teaspoon of salt
1/2-1 teaspoon of pepper
Oil for frying
Depending on where you purchase your beef, you may need to tenderize the steaks with a meat mallet. If so, I would pound 2-3 times on each side. then cut away any fat from the steaks. Cut into 5-6 inch pieces.
Heat your oil in your skillet on medium heat (I prefer a cast iron skillet) just enough to cover 1/4 of an inch or so on the bottom of the pan.
Fry steaks about 5-6 minutes on both sides until nice and crispy. When removing from the pan place them onto towels to remove any excess grease (my family always used newspapers for this and they work great also).
