I have tried several recipes in the past and but finally found one we really enjoy! It is very easy and really delicious! I slightly modified Laura’s recipe and this dish could be made with beef or even shrimp as well.
4-5 Tbls Olive Oil
1 Garlic Clove, minced
1/2 Small Onion, minced
5-6 Cups of fresh chopped veggies (Broccoli, Carrots, Celery, Snap Peas, Cabbage, Spinach, Peppers, whatever you have on hand)
1-2 Cups of Chopped Chicken
Organic Soy Sauce
12 ounces Spaghetti Noodles
Start a pot of water to boil your spaghetti.
In skillet on medium heat, add 3 tablespoons of olive oil and veggies including onions. Toss to coat, cover and stir occasionally, cooking about 10 minutes or until tender but still crisp. Start cooking your spaghetti as well.
Add additional olive oil, garlic and chicken. If using uncooked chicken then continue to cook an additional 5-6 minutes until chicken is no longer pink. If using cooked chicken, then just cook about 1-2 minutes, stirring occasionally.
Add your cooked and drained spaghetti noodles along with enough soy sauce to coat lightly, about 3 tablespoons. Stir until all noodles and veggies are coated. Then enjoy! My personal taste I didn’t think it needed any additional salt due to the soy sauce but salt and pepper to taste.
Many of the recipes I have tried in the past have had rather unusal ingredients and just were not suited to our taste. With this recipe, you can use whatever you have onhand and it is delicious. The last time I made it, I even added 2 cups of spinach in and my family really enjoyed it!
