Recipe: Easy Pinwheel Wraps

These are something very easy for lunch and yet still versatile.  My sons ask for the pin-wheel sandwiches every now and then.  Whatever we have on hand is what we throw into them.

I usually make them with diced meat, shredded cheese and whatever veggies we have on hand using cream cheese as the base.  You could also used Ranch dressing, Caesar dressing or even Italian dressing.

Simply lay your tortilla out and spread about 1 tablespoon of your cream cheese or your base dressing out to cover the tortilla.  Next add your diced meat, cheese and other veggies (don’t overfill though).  Start on one edge and roll the tortilla as tightly as you can.  When I am about half-way I add a little more cream cheese or dressing to help hold the tortilla together.  Once you are at the end of the tortilla, again apply a little more dressing to the edges of the tortilla to keep it sealed.

Slice the tortilla in about 1 1/2″ to 2″ sections.  You can serve with additional dressing although we like it just the way it is.  It is super easy and something a little different from an average sandwich.  You could make a Caesar salad wrap, a BBQ Pork Wrap, Italian wrap, really any combination of whatever you have on hand.

Last night since we had a difficult day we hand whole wheat tortillas with shredded chicken (leftovers), cheddar cheese, spring mix and hubby had mushrooms and tomatoes in his.  We served with carrot sticks and apples and had a very easy dinner!
