Justin’s Honey Peanut Butter Truffle Recipe
So after we posted a review on Justin’s delicious nut butters, I decided to try to make a gluten and soy free peanut butter truffle. My husband and children gladly enjoyed eating the Justin’s peanut butter cups with delight, while I had to enjoy as a spectator. I’m allergic to soy. I then went on a mission to make my own gluten and soy free peanut butter truffles using Justin’s Honey Peanut Butter. I used my favorite gluten and soy free ingredients.
- 1 C Justin’s Honey Peanut Butter
- 3 TB of Organic Valley Unsalted Butter
- Dash of Frontier Salt
- 1 TB water
- 1/2 t Simply Organic Vanilla
- 1 C Wholesome Sweeteners Powdered Sugar
- 1 cup Enjoy Life Chocolate Chips
- 1-2 TB Organic Valley Milk (not in picture)
Step 1 – Melt Justin’s honey peanut butter over low heat with butter. Add vanilla, water, and salt. Stir constantly to avoid scorching until all ingredient are smoothly mixed together. See picture below.
Step 2 – Take off of heat. Stir in powdered sugar until stiff dough forms. See picture below.
Step 3 – Form into 1 TB balls and place on wax or parchment paper. See picture below.
Step 4 – Melt chocolate chips and milk over low heat stirring constantly. After peanut butter balls stiffen a bit dip the balls in the melted chocolate. Place again on wax or parchment paper to harden. I’m not great at this step. I don’t have a lot of experience making candy. The recipe should make around 24 truffles.
They are heavenly! If you could imagine a gluten and soy free Reese pieces (without the food coloring and fillers) you’ve got a good idea of the taste.
