This is a yummy recipe that is quite simple to make! I rarely use poppy seeds when baking but they just go with lemon…anything! Wow that looks like a lot of butter on that muffin! Don’t worry I removed it after the photo and split it on the other muffin (so I guess it didn’t matter, as I ate both muffins:).
Ingredients:
3/4 Cup Sugar
1/2 Cup of Melted Butter
2 Eggs
1 Tsp Vanilla Extract
3 Tbsp Lemon Juice
2 Cups Whole Wheat Flour
1 Tsp Baking Soda
1/2 Tsp Salt
1/2 Cup Milk
2 Tbsp Poppy Seeds
Directions:
Preheat your oven to 350°. Use either muffin liners or lightly oil or butter your muffin tins.
In a mixing bowl, cream together your butter and sugar. Then beat in your eggs, vanilla extract, and lemon juice.
Then add your flour, baking soda and salt into the bowl; mix well.
Next add your milk and mix throughly. Fold in your poppy seeds until just mixed.
Fill each cup 3/4 full.
Bake for about 20 minutes or until just browned on top.
