Recipe: Orange Cake with Wholesome Sweetener Organic Sweetener

A good friend of mine that is a missionary overseas in Asia came to visit and made a delicious orange cake for us.  She was more than willing to share her recipe (which I slightly adjusted).  It was a fitting desert to make for our Sister’s Girls Night In Asian Party we had this last week.

This recipe is so simple but turns out so good!  If you are a fan of oranges, you need to give this easy recipe a try!

Ingredients:

  • 4 Oranges
  • 6 Eggs
  • 2 Cups of Flour (I use Whole Wheat)
  • 2 Cups of Wholesome Sweetener Organic Sugar
  • 2 Teaspoons of Baking Powder

Directions:

Preheat your oven to 350 degrees.  Lightly grease a bunt cake pan (I use coconut oil) and dust with four.  Separate your egg yolks from your egg whites.

Beat your egg yolks with your Wholesome Sweetener sugar.

Add in your flour and baking powder and mix on low-speed.

First wash your oranges well.  Cut the oranges into wedges.  Place into a food processor and puree.  Add the oranges to your batter and beat on low-speed until mixed through.   (I take the easy way out but you can also do this by hand by juicing and grating your oranges.)

Fold in your egg whites.  Gently pour your batter into your bunt pan.  Cook for 50-55 minutes until lightly brown.  Allow to cool for 15 minutes and flip over to remove the cake.

This cake is delicious on its own but also is really a sweet treat with a honey cream cheese glaze.
