Recipe: Organic Chicken or Turkey Enchilada Bake-Serves 8 @ $1.69 a Serving

Okay, so I am not great at taking food photos I will have to admit but this recipe is delicious!  I was going to make Chicken Enchiladas but because of children being clingy & wanting to be held I needed to get this in the oven quickly.  I decided to make an Enchilada Bake instead.  (It tasted just as good). 

Ingredients:

  • 8-Whole Grain Organic Corn Tortillas
  • 2 Cups of Shredded Chicken
  • 1 Cup of Organic Brown Rice (Cooked)
  • 1 Cup of Organic Corn
  • 1 Cup of Organic Black Beans
  • 4 Cups of Organic Tomato Sauce
  • 1 Teaspoon Chili Powder
  • 3/4 Teaspoon Cumin
  • Salt & Pepper to taste
  • 8 oz Organic Cheddar Cheese (separated into 2)

First cook your rice according to the package directions.  Then preheat your oven to 350.  Next simmer your tomato sauce with your spices for 15 minutes or so.  Grate your cheese while you are waiting.  Break your tortilla into bite size pieces 1-2″.  Put all the ingredients (half the cheese) in your 9×13 pan and stir to mix.  Make sure all your tortilla pieces have been coated with sauce and make sure the ingredients have been mixed thoroughly.  Then sprinkle the remaining cheese on top.  Bake at 350 for 25-30 minutes until the cheese is melted and the dish is heated through.

Enjoy!  It is yummy and so simple!  Both my two & three year olds love this dish (my son however picks out the black beans so I occasionally make them on the side.  Austin likes pretty much all other beans).  This would be a super easy dish to make a double batch to freeze and have one later.  Here is the cost breakdown:

1 Teaspoon Chili Powder-$.13
3/4 Teaspoon Cumin-$.24
Salt & Pepper to taste
8 oz Organic Cheddar Cheese-$2.48 Bulk @ Azure Standard-Rumiano Organic Cheddar $4.98lb

The total for this dish is $13.49 for 8 servings or $1.69 a serving with all organic ingredients!!!

Now I purchased many of these items on sale and the tomato sauce was free but the above prices are if you were to purchase them off the shelf no coupons, no sales.  (I try not to do that myself).   I was able to make this dish for $5.67 or $.71 a serving with the ingredients I purchased on sale!
