Recipe: Peanut Butter Swirl Bars (Dairy & Gluten Free Options)

If you are looking for a quick yummy treat and your family likes peanut butter and chocolate, this one is a hit at my house!


1/2 Cup Peanut Butter
1/3 Cup Coconut Oil or Melted Butter
1 Cup Honey or 1 1/2 Cups Sucanat or Brown Sugar
2 Eggs
2 Tsp Vanilla Extract
1 Cup Whole Wheat Flour or 3/4 Cup of Coconut Flour
1 Tsp Baking Powder
1/2 Cup Chocolate Chips (I use organic or Soy Free)


Preheat your oven to 350 degrees.  Butter a 9×13 baking pan.  Then mix together the first four ingredients.  Next add your eggs and vanilla and mix well.  Gently stir in your flour and baking powder.  Spread into your pan and sprinkle the chocolate chips on the top.

Bake for 3 minutes, then remove from the oven.  Take a butter knife and creating back and forth motions, swirl or marbelize your chocolate chips into to create a pattern.  Return to the oven and continue to bake for about 20 minutes.

Allow to cool before cutting into bars.

Serves 10-12

If you are looking to go Gluten-Free, use the Coconut Flour in place of the wheat flour.  For dairy free, use the coconut oil in place of the butter.  I use either organic chocolate chips or Enjoy Life Chocolate Chips that are soy and dairy free!
