So this truly is a fun summer time drink, but just because it is getting cold doesn’t mean we can’t enjoy some of our summer time favorites. Lemonade is a favorite in our home and we love to add strawberries or raspberries to give it a flavorful pink twist.
This is really a simple recipe and can easily be doubled or tripled and stored in mason jars for a get together. This recipe makes enough for 64 ounces or enough to fill 2 quart jars.
Ingredients:
- 6 cups of water
- 1 cup of fresh lemon juice (it is so much better with fresh squeezed)
- 1 cup of raspberries (frozen or fresh)
- 1/2 to 3/4 cup of sugar to taste or 1/4 to 1/3 cup of honey
Directions:
In a small sauce pan, add your raspberries and 1 cup of water. On medium low heat, stir the berries so the juices release. I even use a potato masker to get as much from them as I can.
Using a small sieve or fine cheese cloth, drain the juices out and to separate the seeds.
In a different saucepan, add your sweetener of choice and 2 cups of water. Bring your water to a slight boil and stir until it is dissolved and mixed thoroughly.
In your pitcher or saucepan, combine your sweeten water, raspberry juice, lemon juice and 3 more cups of water.
Once you get use to homemade lemonades, you will never go back to store-bought mixes!
For a fun twist, make lemonade ice cubes to serve. Add a berry to each ice-cube slot, then fill it with your lemonade and freeze.
