We have been experimenting with various ways to cook with quinoa in our dishes. This has been our favorite recipes so far! It is so simple and yet very hardly and delicious. Quinoa is a little pricier but goes such a long way.
Quinoa is best when you can soak it overnight and then rinse it the following day. You do not have to soak it though to cook it, just be sure to rinse it thoroughly or you will have a slight bitterness.
Ingredients
- 1-3 cups of shredded chicken (use whatever you have)
- 1 cup of chicken stock or 2 cups of chicken broth
- 3 cups of water
- 1 cup quinoa
- 2 teaspoons thyme
- 1 teaspoon of sea salt
- 2 cloves of garlic, minced
- 4 carrots, sliced
- 4 celery stalks, sliced
- 1 medium onion, diced
- Pepper to taste
Directions
You can either use leftover chicken or cook it right in your crockpot. Once your chicken is cooked, shred it and put all the ingredients back into your crockpot and cook on high for about 4 hours. (If you are using chicken broth, reduce your water by 1 cup.)
This is so delicious with some warm garlic bread, homemade biscuits or buttered bread.
