Recipe: Yummy Banana Bread or Banana Muffins

We love bread in our house from warm whole wheat bread fresh out of the oven to banana bread or cinnamon raisin bread.  We made Banana bread this past week and Austin has asked for it again each and everyday.  Although we have tried many Banana bread recipes, this is a recipe I have used for years that we slightly adjusted when we started using coconut oil.  It is so delicious!


2 Cups of Flour (I use Whole Wheat)

1 Tbsp of Baking Powder

1/2 Tsp of Salt

1/2 Cup of melted Coconut Oil or Butter

3/4 Cup to 1 Cup of Whole Sugar (depending on taste)

2 Eggs

3 to 4 Mashed, Ripe Bananas

1 1/3 Cups of chopped Nuts (optional)

1/2 Cup of Chocolate Chips (optional)



Preheat your oven to 350 degrees.  Grease your pan or muffin tin with coconut oil or butter, whichever you will be using.

Next stir your dry ingredients together.  In a separate bowl, cream your melted coconut oil or butter with your sugar.  Beat in one egg at a time.  Stir in your mashed bananas.  Add your dry ingredients all at one time.  Only stir just enough to mix.

Add in any optional ingredients, stirring just enough to mix.  Spoon into greased pan or muffin tins filling 3/4 full.

If baking as banana bread, bake for 50-60 minutes.  When a knife inserted in the center comes out clean it is finished.  If baking as muffins, bake 20-22 minutes until the tops are golden.  Makes either one loaf or 15-18 muffins.


Note: If you are new to cooking with coconut oil, it is firm and solidified when it cools.  If heated it melts to a liquid and will become harder once cooled.
