Recipe: Yummy Gluten Free Crustless Coconut Pie

This recipe is so delicious and super easy!  I had something like this when I was learning to sew from a dear friend in her 70s back in the early 90s!  I recently came across this recipe in a GRIT magazine!  I was so excited to give it a try.  I made some adjustments and here it is!  Although it is really yummy, I probably wont be making this often as I will eat way to much of it!  This was an excellent time to use all my coconut Tropical Traditions products for this recipe.



4 Eggs

1 1/2 cups of sugar

1/2 cup of coconut flour (or any other flour of your choosing)

1/4 cup of melted coconut oil or melted butter

2 cups of milk

1 1/2 cups of shredded coconut

1 1/2 teaspoons of vanilla



First preheat your oven to 350.  Grease (I used my coconut oil) a pie plate and set aside.

Nest combine your ingredients into a bowl in the order given.  Mix well after adding the coconut oil before adding the milk.  Mix well to combine all the ingredients.

Pour into your pie plate and bake for 45-50 minutes.  The center will still appear to be on the soft side.  When it is done it should have a golden top with lightly brown edges.  Allow to cool and it should be easy to cut!  Enjoy!
