Recipes: Delicious Potato Soup-Yummy :)

I have really been missing my mother lately, everyday really.  Tomorrow the 5th will be six months since we lost her.  I have been making many of her recipes lately, they just make me feel like she is here again.  It is amazing how we relate food with our emotions.

This Potato Soup Recipe was my dear mother’s.  She used to make it on cold winter days when we lived in Utah.  With it starting to cool down, I was craving my Mother’s potato soup to take me back to the memories of those days in Utah as a teenager.

This is not a low fat soup but is made with wholesome ingredients!  I try to always use organic products in my recipes so I had ordered organic potatoes with my last several Azure Standard orders so I had plenty on hand.  I also was so excited to have fresh raw milk to use!


  • 4 Cups of Milk & 4 Cups of Chicken Broth
  • 1 Cup of Shredded Carrots (I use fresh chopped broccoli or corn occasionally-whatever you have on hand to get extra veggies added in.)
  • 4 Tbls of Butter
  • 5 Tbls of Flour
  • 4 Cups of Chopped Potatoes
  • Salt-to taste
  • Pepper-to taste
  • 1 Tsp Garlic Powder


  • Chopped Chives
  • 4 Slices Crumbled Bacon
  • 1 Cup Shredded Sharp Cheddar Cheese

First start off by melting your butter on medium-low heat.  Then using a wisk stir in 5 Tbls of flour. It looks very thick and clumpy but this is what will make the soup thicken.

Next add 1 cup of milk and using your wisk stir vigorously.  Continue stirring until all flour clumps have dissolved, about two minutes.

Once the mixture is smooth, add the additional milk and or milk/broth mixture.  Continue stirring with wisk to prevent flour from scorching on the bottom of the pan.  Bring the mixture to a slight boil but do not increase temperature or it will scorch.

Once a slight boil has occurred add in the uncooked 4 cups of potatoes, 1/2 tsp garlic powder, salt & pepper to taste.  Bring the soup to a slight roiling boil on same heat stirring frequently.  Then reduce heat to low.  Continue to stir occasionally and cook approximately 35-40 minutes.

When the soup is finished cooking it should have a thick consistency and the potatoes will be cooked through.  Garnish with shredded cheese, bacon & chives!  Serve with a hearty bread or homemade rolls and it is so delicious!
