Before I was a mom of many, I loved to entertain. We entertained friends far more often than we do now. I still love entertaining but these days my time is far less. When we do entertain I usually opt for something simple. Simple can still be classy but simple none-the-less.
In our house, I usually try to prepare as much as I can ahead of time. When it comes times for friends and family to visit, I want to actually sit and enjoy their visit some. With lots of little fingers, opting for lots of finger foods is usually a great choice. And anything with guacamole and shrimp, that is always a huge success!
I was recently introduced to GOODFOODS guacamole in the produce at Walmart. It takes lots of the work our of entertaining as it is all made for me. I just open the package and taste the deliciousness. If you were here, you would too. Your taste buds will thank you. I can honestly feel good about not making it homemade because it is freshly made with only the good stuff, nothing artificial and never heated, making it a great alternative.
My two youngest and myself adore avocados. We eat them when they are ripe just plain, sometimes with a little oil and vinegar or a dash of salt. They don’t last long in our house. And I love avocados because they pack a bunch of nutrition and protein into them, over 15 vitamins and minerals.
So onto our shrimp taco bites, these are literally the easiest to make. They are so pretty to look at and so delicious to eat!
- Tortilla Chips
- GOODFOODS Guacamole
- Sour Cream
- 2 Tablespoons Butter or Earth Balance Butter
- Hot Sauce to taste
- Lettuce leaves, optional
- Cilantro to garnish, optional
Lay out your shells and place one dollop of GOODFOODS guacamole on about 3/4 of the shell.
Fill the remaining with a small dollop of sour cream. If your family enjoys lettuce, add one leaf of lettuce.
I totally went the easiest route and bought pre-cooked shrimp for these. Melt your butter and mix in your hot sauce to taste. Coat your shrimp with the sauce and then place one on top of your lettuce. If you wish to heat the shrimp, you can heat them for about 3-4 minutes after coating them.
