Triple Berry Cheesecake Parfaits Recipe

Triple Berry Cheesecake finished

My husband’s favorite dessert is cheesecake.  I haven’t made one in quite a while so when the Stonyfield Yo-Getters team leader asked who wanted to create a recipe featuring Stonyfield Yogurt and an Earthbound Farms Product, I jumped!  We love both companies and being that I had just seen some ripe Earthbound Farms strawberries at the grocery store, I knew I could create something yummy!  I received coupons for my products in the mail and couldn’t wait to get started.

I wanted to make something similar to a cheesecake but without having to cook!  These are the perfect solution for a cool, decadent treat on a hot summer day.

Triple Berry Cheesecake Parfaits Recipe

Makes 4 servings

  • 1 Cup of Earthbound Farms Strawberries, hulled and chopped
  • 1/2 Cup of Blackberries or Blueberries
  • 1/2 Cup of Raspberries
  • 1 Tablespoon of Sugar
  • 5 Tablespoons of Honey
  • 8 Ounces of Cream Cheese
  • 1/2 Cup of Stonyfield Greek Yogurt (Plain or Honey)
  • 1/2 teaspoon of Vanilla
  • 4 Graham Cracker Sheets (or you can make them homemade here)

Triple Berry Ingredients

You really can use any type of berries you wish, or even only one type to make it simple.  We love berries and usually have some type fresh in the fridge.  You can also use frozen berries as well.

In a bowl, with one type of berries, combine 1 teaspoon of sugar and begin to mash them with a fork.

Triple Berries

Combine your cream cheese, greek yogurt, honey and vanilla in a mixing bowl.  Beat on medium-high speed until you have a smooth and creamy texture, about 3-4 minutes.

Stir your berries again to make sure the sugar is dissolved.  Crush your graham crackers so that they are rough crumbs.

Triple Berry Layer 1

Spoon about 2 tablespoons of the strawberries into the bottom of each glass.

Triple Berry Layer 2

Add about 3 teaspoons of the cream cheese/yogurt mixture next.

Triple Berry Layer 3

Next you want to layer your graham cracker crumbs and each glass will get 2 teaspoons.

Triple Berry Layer 4

Repeat by adding your next type of berries, followed by more cream cheese and graham crackers.

Triple Berry Layer 6

Then I added one last teaspoon of cream cheese mixture to the top, added a teaspoon of my berries and then lightly sprinkled with more graham crackers.

Triple Berry Last Layer

You can serve these immediately but I thought they were amazing placed back in the fridge and served after they had chilled about 4 hours.

Triple Berry Final

Although I was provided free product coupons for my recipe, no other compensation was received.

  1. Oh how yummy, looks like the perfect summer treat! I love that you used greek yogurt in the cheesecake mixture, that is awesome. I need to try that! Thanks!

  2. Oh those look so good. And you don’t have to bake them? How peculiar and lovely. Less work for me. I think I love these. I surely love your step by step instructions. You make it sound and look easy.

  3. I will have to make this for hubby!!!
This is what I used to make before my son when he was a teenager, book study goodie nights & for dinner guest. Everyone not only loved it, but no baking, quick prep and as a suggestion…..put berries of choice on each slice before serving or the juices will make it mushy.

1 package (8 oz.) cream cheese, softened*
    1 cup sour cream
    1/3 cup sugar
    2 teaspoons vanilla
1 tub ( 8 oz.) frozen non-dairy whipped topping, thawed
1 Ready Graham cracker Pie Crust (or make your own)
Fresh strawberries, halved or any other berry

    1. In large mixing bowl beat cream cheese on medium speed of electric mixer until fluffy. Add sour cream, sugar and vanilla. Beat until combined. Fold in whipped topping. Spread in crust.

    2. Refrigerate at least 2 hours or until set. Top with berries (on each slice). Store in refrigerator. Serves 6-8
