Weekly Meal Plan – 10/8/12

While I can say I officially fell off the wagon with meal planning since our trip in August, I am so ready to be focused again.  The weather has drastically cooled down and the leaves are starting to just show hints of color.  Fall is the perfect time to be inspired to cook and bake.  Cool air filled with the smell of delicious breads and baked goodies sounds perfect to me!  I am a soup lover and can’t wait to get back into making soups, stews and chili.

We are planning to try to visit a pumpkin patch in the next two weeks and take a hay ride.  The children love pumpkin anything and although we have purchased several pumpkins so far (to eat that is) they both want to pick out “big” pumpkins.  I think it is something they will love!

With a little help from the children, this is what we decided would be on the menu in our house this week:

 

Monday

Breakfast:  Pumpkin Biscuits with Honey Cream Cheese Spread
Dinner:  Homemade Beef Stroganoff, Peas, Green Beans

Tuesday

Breakfast:  Scrambled Eggs with Spinach & Cheese
Dinner:  Crockpot Roasted Chicken, Rice, Brussel Sprouts

Wednesday

Breakfast:  English Muffin Bread with Justin’s Nut Butter, Fruit
Dinner:  Chicken and Rice Soup, Green Beans

Thursday

Breakfast:  Yogurt & Granola, Bananas
Dinner:  Loaded Potato Soup in Bread bowls, Salads

Friday

Breakfast:  Homemade Breakfast Burritos, Fruit
Dinner:   Leftovers

Saturday

Breakfast:  Overnight French Toast, Apples (I am going to try a version of this recipe)
Dinner:  Chili with Garlic Cheddar Biscuits, Carrots & Celery Sticks

Sunday

Breakfast:  Banana Nut Muffins
Dinner:  Chicken Stir-fry with fried rice
