After the last two very crazy weeks, I am ready for a somewhat more normal week this week. It will still be busy, but not packed. I am so looking forward to getting my house put back together and our eating habits back to normal. I am still working on making more room in my freezer so we are trying to use up some of what we already have to replenish with new meat. This is what we are aiming to have this week:
Monday:
- Breakfast-Pancakes, Scrambled Eggs, Fruit
- Dinner-Scalloped Potatoes with Ham, Corn, Green Beans
Tuesday:
- Breakfast-Breakfast Burritos & Bananas
- Dinner-Venison Roast, Carrots, Potatoes (from my garden) and Peas
Wednesday:
- Breakfast-Banana Muffins & Apples
- Dinner-Crockpot Santa Fe Chicken over Brown Rice (I’m going to make another version of this recipe as I did something altogether different last week)
Thursday:
- Breakfast-Scrambled Eggs, Toast, Fruit
- Dinner-Lasanga Casserole, Carrots & Celery Sticks (didn’t make this last week either)
Friday:
- Breakfast-Breakfast Cookies, Hard Boiled Eggs, Fruit
- Dinner-7 Layer Bean Dip, Tortilla Chips
Saturday:
- Breakfast-English Muffin Bread w/ Peanut Butter, Fruit
- Dinner-Chicken Fried Steaks, Mashed Potatoes, Corn on the Cob, Salad
Sunday:
- Breakfast-Apple Strusel Muffins, Hard Boiled Eggs, Bananas
- Dinner-Chicken Pot Pie
